A few things say Italy as loud as aperitivo do, the traditional drink that takes place at the end of the workday as a kind of warm up to dinner, typically sipped with light snacks.
The most famous drink for the aperitivo is the Aperol Spritz, also known as "summer in a glass", due to its vibrant orange hue and its very slightly bitter taste with a sweet hint of orange and a light tang of herbs.
It is made by Prosecco, which gives it a sparkling touch, Aperol for the bitter and Soda water to refresh. It is usually served over ice in a lowball glassand garnished with a slice of orange, or sometimes a green olive.
Although its origins are not entirely known, it is thought that it was born between the second and third decade of the 20th century in Veneto, Northern Italy. Its success was overwhelming and over the years it has became a cult cocktail famous all over the world. Nowadays, it is served in many different ways: with Aperol, the classic way or with more bitter flavours, Campari, Cynar, or, especially in Venice, Select.

Ingredients
60 cl Aperol
Splash Soda water
4 cl Prosecco
A slice of orange
Ice
How to make the perfect Aperol Spritz
1. Start with a wine glass or rocks glass and fill it with ice.
2. Pour prosecco a little more than halfway up the glass and Aperol halfway from the prosecco to the rim of the glass. Top with soda water.
3. Garnish with a slice of orange.
Add a Venetian touch: put an olive in the glass!
