GRAPES: Nebbiolo, 30-year-old vines
PRODUCTION ZONE: Barbaresco (Langhe – Piedmont)
VINIFICATION: soft pressing of freshly harvested grapes, spontaneous fermentation at 28°C with maceration on the peels for approximately 12 days. Spontaneous malolactic fermentation carried out in stainless steel. The aging continues for few months in stainless steel tanks before bottling.
COLOR: deep ruby red with garnet red reflections, robust
AROMA:  intense, complex, fine, fragrant, fruity and floral with highlighted spicy hints.
TASTE: warm and smooth, full-bodied, fresh, very persistent and harmonious. Usignolo is a Nebbiolo that delivers a highly pleasurable and profound tasting experience, even for those at their first experience with the grandiosity of this grape variety. In order to reach this goal, after an accurate selection of the grapes, the wine is aged which tends to soften the tannins and makes it go down more smoothly, preserving the freshness of the aromas. This Nebbiolo is a splendid example of a full-bodied balanced wine. The bouquet is characterized by notes of rose, strawberry and violet; on the palate it is elegant and full, with tannins in delicate harmony
SUGGESTED PAIRINGS: It goes perfectly with second courses or ripened cheeses, with the traditional bagna caoda from Piedmont or with grilled red meat and game.
