Story of the wine:
Gallo Giallo is a fine wine made from Trebbiano Montanaro grapes, hand-harvested in mid-September in the picturesque locality of "Valpiana di Brisighella". The vineyard, situated at 240 meters above sea level, covers about 8000 square meters with approximately 35 years old plants. This privileged location, with northeast exposure, is surrounded by centuries-old olive trees and immersed in a wooded setting, contributing to the wine's unique character. The vineyard yield is about 5 tonnes.
Once in the cellar, the grapes undergo a 4-day maceration on the skins. After racking, the completion of alcoholic fermentation is awaited, which occurs solely through the indigenous yeasts present in the grapes. At this point, the wine is aged in steel, where it undergoes malolactic fermentation, until July of the following year.
During the aging period, two rackings are performed to eliminate the larger and potentially problematic lees, thus keeping the wine only on the noble lees. This choice allows avoiding any type of clarification and filtration. During the racking operations, 2 grams of potassium metabisulfite are added each time to ensure product stability and prevent undesired oxidation.
Finally, once bottled, Gallo Giallo ages for an additional 5 months. The result is a wine that authentically expresses the characteristics of Trebbiano Montanaro, with a delicate aromatic profile and a balanced structure. It is a true tribute to the wine tradition of our region.
