ABOUT THE PRODUCT
Bresaola is air-dried, salted beef that has been aged two or three months until it becomes hard and turns a dark red.
It is a lean dried salted beef from the Valtellina, a long Alpine valley in the Lombardy region of Northern Italy. Bresaola has an IGP trademark (Protected Geographical Indication) limiting its production only to certified master butchers in the Lombardy region.
ABOUT THE PRODUCER
Salumificio Ibis, located in Busseto, a little town nearby Parma, in the Northern Italy. The area has always been considered the cradle of high Italian charcuterie thanks to the right combination of its tradition, climate and the passion of its people.
