Malolactic fermentation carried out in small wooden containers that are not new, mixing the noble lees with special artisanal rods. Maturation in 3rd, 4th and 5th passage barriques for at least 8-10 months. Bottling without clarification and without the addition of oenological additives, except for small doses of sulfur.
