The cheese Brie, is a French cheese that elaborates with milk of cow. It is covered with a soft layer entirely edible, formed by the mold Penicillium candida (and sometimes by other bacteria like the Brevibacterium linens) that appears during the period of curing. The paste is of pale colour, ivory or yellow clear. The texture is cremosa and the delicate flavour, although this goes purchasing a Stronger flavour satisfied mature. It gives off a light aroma to ammonia.
