Mozzarella is a spun paste cheese produced with cow's milk, deriving from the act of cutting (clean cut), which occurs when the cheesemaker cuts a piece of dough spun from the long cheese band forming a mozzarella.
The milk is added with lactic ferments and then curdled with calf rennet, the curd is then left to rest so that the acidity increases further.
Then the curd is then minced into strips and boiling water is added and vigorously mixed, so that it starts to "spin"; from here originates the mozzarella.
