Story of the wine:
The Canyon d'Ammone is a unique and fascinating wine, the result of a winemaking tradition deeply rooted in the Marradi territory. This extraordinary nectar is born from Ciliegiolo grapes of the indigenous clone AMPELOS DGV14, cultivated in a vineyard located at 330 meters altitude, with a favorable southwest exposure.
The heart of this wine lies in its plants, which boast an age of about 55 years. This longevity gives the grapes a complexity and depth of flavors that only time can bestow. The harvest is strictly carried out by hand, a choice that not only preserves the integrity of the plants by avoiding the stress caused by machinery but also allows for a careful selection of the best grapes, laying the foundation for high-quality winemaking.
Once in the cellar, the bunches are destemmed and crushed in the vat, initiating a vinification process that respects the nature of the fruit. In the following three days, the skins that naturally surface due to the start of spontaneous fermentation are manually removed daily. This meticulous technique aims to obtain a wine that stands out for its intense aromas of red fruits and for a light and carefree drinking experience.
The aging process takes place in glass demijohns, a method that preserves the purity and freshness of the wine. Bottling is scheduled for May, after two rackings during the winter season. During the racking operations, 2 grams of potassium metabisulfite are added each time to ensure product stability and avoid undesired oxidation. Finally, the Canyon d'Ammone rests in the bottle for the next 6 months, a period that allows the aromas to perfectly integrate and the wine to reach its full potential.
The result is a wine that embodies the essence of the Marradi territory, with an organoleptic profile that enhances the unique characteristics of the local Ciliegiolo.
