Story of the wine:

Canyon D'Ammone is an extraordinary wine that aims to capture the oenological essence of the entire Lamone Valley. This unique blend is the result of careful manual harvesting and a meticulously studied composition that reflects the diversity and richness of the territory.

The grape blend of this wine is a true journey through the valley's vineyards. It begins in the first Faenza hills with 5% Centesimino, an indigenous black grape variety known for its intense fruity aromas. These grapes come from a 25-year-old vineyard, located at 80 meters above sea level, on yellow sands with eastern exposure in the Castel Raniero area.

The heart of the blend consists of 40% Romagnolo Sangiovese, grown on the characteristic clay badlands downstream of Brisighella. These grapes come from a 20-year-old vineyard, situated at about 100 meters altitude with northeast exposure. An additional 25% of Romagnolo Sangiovese comes from more mature vines, about 40 years old, located at 150 meters altitude in Strada Casale, with eastern exposure.

Romagnolo Trebbiano contributes 15% from the same vineyard as the Sangiovese in Strada Casale, adding freshness and complexity to the blend. The remaining 15% is a fascinating mix of grapes from very old plants, ranging from 40 to 80 years old. This unique vineyard is nestled in the small valley of the Marcianella furnace, planted on the steps left by excavations for brick manufacturing, taking advantage of the presence of red soil. Here, Tuscan Trebbiano, Tuscan Sangiovese, Ciliegiolo from Marradi, and the oldest Merlot plants are found.

In the cellar, the grape clusters are gently destemmed to preserve the integrity of the berries. The wine remains in contact with the skins for 15 days, during which daily pump-overs are performed. Alcoholic fermentation occurs spontaneously thanks to the indigenous yeasts naturally present on the grapes.

After racking, the wine is aged in steel tanks. In December, during the first racking, 500 liters are transferred to tonneaux for aging, while the rest continues its evolution in steel until the end of July. Meanwhile, a second racking is carried out to further refine the wine. During racking operations, 2 grams of potassium metabisulfite are added each time to ensure product stability and avoid undesired oxidation.

Finally, Canyon D'Ammone is bottled and left to rest for another 5 months before being ready for tasting. The result is a wine that embodies the complexity and richness of the Lamone Valley, offering a unique sensory experience that reflects the diversity of its terroirs and the wisdom of local winemaking tradition.
