Lady'O is the only sparkling wine originated in Montalcino which is produced entirely from the Sangiovese grapes. This makes it a very unique rosé wine of an extraordinary taste and colour. The name Lady'O originates from the nickname given to Donna Olga by her colleagues.

Vinification & Maturation:
As all of the highest quality sparkling wines, Donna Olga Lady'O is made by méthode champenoise (méthode classique). First, the grapes are softly pressed while being protected with dry ice to maintain the temperture and preserve all flavours and parfums. The primary fermentation occures in the wooden barrel for the lenght of several months. The secondary fermentation is accomplished by adding the so-called liqueur de tirage, a mixture of sugar and yeast, to still wine. The wine is then bottled for several months so the yeast reacts with the sugar and the resulting carbon dioxide remains enclosed in the bottle.
Colour: Brilliant pink with ruby reflexes and fine and persistent perlage
Perfume: Fresh and intense with a touch of wild strawberry and rose. After few minutes in the glass, its evolution becomes rich of rose variety
Taste: Creamy and fresh with a fruit intensity and great taste harmony and a long end.
Couplings: Perfect as an aperitif with fish, salmon, seafood or white meat.
