Tomme de Savoie is a semi-soft, pressed cheese with a pliable and firm texture. It is made from raw, skimmed cow’s milk after the cream has been drained off to make butter. It is low in fat content, about 20-40%.
Beneath the rind is an ivory colored, smooth-textured flesh with very small holes. This mild cheese has a raw flavor combined with a hazelnut taste. It is good cheese for snacking served with fruit, bread, salami, and pairing best with red wine.
