ABOUT THE PRODUCT
Our pasta is produced from durum wheat cultivated directly by the company. Semolina and pasta are the only ingredients. We use circular bronze die plates and we dry pasta at temperatures lower than 44°C, taking about 20 hours for short pasta and about 40 hours for long pasta. Linguine has a length of 260 mm, a section of elliptical shape 4,4 mm wide and is 1,5 mm thick. Their cooking time is between 7 and 9 minutes.
ABOUT THE PRODUCER
Azienda Agricola Mancini started as a small family business over 60 years ago, and until today produce their premium quality pasta in the middle of a wheat field where the noble durum wheat grows. Using only the finest raw materials and with the greatest respect for the environment, their pasta has an exquisite, unblemished, and superior flour.
